although it is not possible to change your version ingame, it is possible to make your client to be able to connect to and version Minecraft by spoofing your version and changing some packets/movements to match that version and has already been done using a mod called multiconnect and by integrating it with the labymod classic pvp mode, you can basically play 1.8 normally on 1.16 without having to restart your game
